How to make it

  • 1. Put the egg yolks, 2 teaspoons lemon juice, salt, mustard, and cayenne in blender.
  • 2. Heat the butter in the microwave for 30 seconds first and then in 15 second increments until melted and slightly foamy (approx. 45 seconds total). You can do this in a double boiler or a bowl in a couple inches of boiling water.
  • 3. Place the lid on the blender and blend on high for 5 seconds.
  • 4. Remove the venting lid from the blender lid.
  • 5. Blend the egg mixture on low speed and SLOWLY pour in a VERY thin stream the hot butter while the blender is running. See Photo
  • 6. Once all the butter has been added, place the vent lid back on the blender and blend on high for 5 seconds.
  • 7. You should use the juice of one lemon. And check the blender to make sure the sauce is still liquidy and moving easily through the blades. If it’s not, add a little more juice and give it a stir, then blend again.
  • 8. Taste the sauce and adjust as needed.
  • 9. Add the cayenne pepper to taste and blend on low for 5 seconds.
  • 10. Serve immediately. See Photo

    I have used a recipe like this and to be honest I have used the Knorr's Dry Mixes, But the Chef above me would have none of this. So it was the hard way or the highway, I finally left his employee after six months and got an Executive Chef Position in Troy, Al. I was at a college Troy State University. We feed about 1500 kids for supper and about half that for breakfast. I found it cool that the Pizza Chef made a breakfast pizza the kids loved and this was along time ago.
