Nicks Enchiladas Recipe
My husband taught me how to make enchiladas. It's really easy to eat it with chicken or just vegetarian.

Ingredients
  • 3 grilled chicken breasts, salt-and-peppered (optional)
  • 1 can black beans, with salt, pepper and garlic powder to taste
  • 1 can pinto beans
  • 1 can mild enchilada sauce
  • 1 can medium enchilada sauce
  • 6 oz. sour cream
  • 2 cups shredded cheese
  • 10 taco-size tortillas
  • 1 can Rotel (regular or milder flavor)
  • 9x13 glass baking pan

Directions
  1. Drain and smash beans.
  2. Add salt, pepper, and garlic powder to taste.
  3. Add Rotel to beans to make filling.
  4. If using chicken, shred chicken into bite-sized chunks.
  5. Preheat oven to 350 degrees.
  6. Put filling, a litte cheese and chicken into tortillas.
  7. Roll each tortilla into a "closed taco" and put into baking pan.
  8. Repeat until baking pan is filled with 2 rows of 5 "closed tacos."
  9. Mix sour cream with mild and medium enchilada sauces.
  10. Pour all of the sauce on top of "closed tacos."
  11. Sprinkle rest of cheese on top of the sauce.
  12. Cook for 40 minutes at 350 degrees.
