How to make it

  • 1. Mix the marinade ingredients together and let sit 30 minutes.
  • 2. Remove the lobster meat from the tails.
  • 3. Devein and cut into bite size chunks.
  • 4. Put in the marinade and marinate for 20 minutes (30 minutes tops). Stir gently.
  • 5. Fire up the BBQ and put the skewers in water to soak, if using bamboo skewers.
  • 6. Remove lobster from marinade and let drain.
  • 7. Put the lobster, bell pepper pieces, mushrooms and artichoke heart quarters on the skewers, alternating.
  • 8. Cook on the BBQ until just done. See Photo
  • I like this simple so steamed rice and a green salad to finish the meal.
