Bbq Lobster Skewers

- The marinade: shopping list
- • 2 Tbs. olive oil. shopping list
- • 1 Tbs. lemon juice. shopping list
- • 1 tsp. lemon zest. shopping list
- • 1 Tbs. Sake. shopping list
- • 1 scant tsp. grated ginger, to taste. shopping list
- • Salt and FG pepper to taste. shopping list
- The skewers: shopping list
- • 2 or 3 lobster tails, depending on size. Simmer the rest of the lobster for broth. shopping list
- • 2 or 3 bell peppers, seeded and sliced into eights. shopping list
- • A dozen small mushrooms, stems removed and cleaned. shopping list
- • 1 bottle of artichoke hearts, drained and hearts quartered. shopping list
How to make it
- 1. Mix the marinade ingredients together and let sit 30 minutes.
- 2. Remove the lobster meat from the tails.
- 3. Devein and cut into bite size chunks.
- 4. Put in the marinade and marinate for 20 minutes (30 minutes tops). Stir gently.
- 5. Fire up the BBQ and put the skewers in water to soak, if using bamboo skewers.
- 6. Remove lobster from marinade and let drain.
- 7. Put the lobster, bell pepper pieces, mushrooms and artichoke heart quarters on the skewers, alternating.
- 8. Cook on the BBQ until just done. See Photo
- I like this simple so steamed rice and a green salad to finish the meal.
