Marinated Lamb Kabobs

- • 1 lb. (500g) good lamb, cubed. shopping list
- • 2 Tbs. honey or molasses. shopping list
- • 2 Tbs. Chinese rice wine or Sake. shopping list
- • 2 Tbs. light soy sauce. shopping list
- • 2 Tbs. raw sugar. shopping list
- • 1 clove garlic, minced. shopping list
- • 1 doz. Small cherry tomatoes. shopping list
- • 3 large bell pepper, seeded and cut in eights. shopping list
- • 4 - 5 small onions, peeled and quartered. shopping list
- • 20 small mushrooms, stems removed and cleaned. shopping list
How to make it
- 1. In a large bowl, mix together the rice wine, soy sauce, sugar and garlic.
- 2. Rub the lamb with the marinade mixture and marinate for 2 to 3 hours in the refrigerator. Longer is better.
- 3. Get the barbe going.
- 4. Put all the onion quarters on a skewer and cook on the Barbie for ten minutes, turning once See Photo. Let cool.
- 5. While the onion cooks, remove the lamb from the marinade and let drain.
- 6. When the onion has cooled, put the lamb, onion quarters, bell pepper pieces, tomatoes and mushrooms on skewers, in alternating order. If using bamboo skewers, soak in water before use.
- 7. Paint the honey on the lamb. Don’t worry if you get a bit on the veggies.
- 8. Put on the Barbie and cook to desired doneness, turning as needed. See Photo
- Serve with a salad, steamed rice or pasta and maybe garlic bread. I like a dry red with this.
- Yes, you can sub chicken or pork. If pork, check for doneness.
