Marinated Octopus, Artichokes With Focaccia

- • 1000 gallon flour – I checked it twice. I think this should be about 5 cups. This is Italian bread so that should be about right. shopping list

- • ¼ cup chopped rosemary shopping list
- Marinated Artichokes shopping list
- • juice of 1 1/2 lemons shopping list
- • 2 L water shopping list
- • 1 Tbsp flour shopping list
- • 1 Tbsp salt, plus extra for seasoning shopping list
- • 10 artichokes, outer leaves removed and peeled shopping list
- • 1 Tbsp olive oil shopping list
- • zest of 1 lemon shopping list
- • 1 tsp parsley, chopped shopping list
- Pickled Onion shopping list
- • ½ red onion shopping list
- • 2 tsp salt shopping list
- • 1 tsp sugar shopping list
- • juice of 1/2 lemon shopping list
- chili Honey shopping list
- • ½ cup honey shopping list
- • ½ cup Marsala shopping list
- • 1 chili, seeds removed and minced shopping list
- • ½ tsp salt shopping list
- Marinated Octopus shopping list
- • 4 octopus tentacles, cooked and thinly sliced on a bias 1/4" thick shopping list

- • ¼ cucumber, sliced 1/4" thin on a mandolin shopping list

- • 1 Tbsp extra virgin olive oil shopping list

- • 1 recipe Focaccia, cut into pieces shopping list
- • 1 recipe Marinated Artichokes shopping list
How to make it
- Focaccia (Bread)
- 1. Place yeast in the stand mixer bowl. Add water and stir until yeast blooms. Approximately 1 minute.
- 2. Add remaining ingredients except for olive oil and rosemary. Using a dough hook, mix all ingredients on low until dough is smooth and elastic, approximately 8-12 minutes.
- 3. Grease a large bowl with 1 tablespoon of olive oil. Place dough in bowl to proof until dough has doubled in size. Approximately 45 minutes.
- 4. Grease a large roasting tray with 1 tablespoon of olive oil.
- 5. Punch dough to deflate and place in large roasting tray.
- 6. Cover with plastic wrap and refrigerate overnight.
- 7. Remove dough from fridge and preheat oven to 365 F.
- 8. Press top of dough with fingers. Set aside in a warm place to proof until dough doubles in volume.
- 9. Brush top of dough with 2 tablespoons of olive oil and sprinkle rosemary.
- 10. Place in oven to bake until golden and cooked. Approximately, 40 minutes.
- 11. Set aside to cool before slicing.
- Marinated Artichokes
- 1. Place juice of ½ lemon, water, flour and salt in a pot over medium heat.
- 2. Add artichokes and simmer until tender, approximately 30-40 minutes. Set aside and cool in liquid.

- 4. Place olive oil, remaining lemon juice, lemon zest and parsley in a bowl. Add artichoke hearts, season with salt and toss.
- 5. Set aside until assembly.
- Pickled Onion
- 1. Place red onion and ½ teaspoon of salt in a bowl. Toss and set aside until onion softens, approximately 1 hour.
- 2. Rinse onion under cold water to remove salt. Pat dry.
- 3. Place onions, sugar, remaining salt and lemon in a bowl. Toss and set aside until assembly.
- Chili Honey
- 1. Place honey in a small pot over medium-low heat. Cook until honey becomes runny.
- 2. Deglaze with Marsala.
- 3. Remove from heat, add chili and season with salt. Set aside until assembling Marinated Octopus.
- 1. Marinated Octopus
- 1. Heat grill to medium heat. Brush grill with olive oil and season octopus with salt and pepper.
- 2. Place octopus on grill until lightly marked on all sides, approximately 2 minutes.
- 3. Remove octopus from heat and toss with 2 teaspoons of Chili Honey.
- Assembly
- 1. Place 1 piece of Marinated Octopus in a small bowl. Layer 1 piece of cucumber on top followed by another piece of Marinated Octopus.
- 2. Top with Pickled Onion and garnish with 1 teaspoon of Chili Honey.
- 3. Drizzle with extra virgin olive oil, a drop of lemon juice and serve.
- 4. Place Foccacia on a large serving platter.
- 5. Place Marinated Artichokes in a small bowl and serve See Photo
