Bourbon-glazed Salmon

- • Four 6-oz. (170 g) skinless salmon fillets. shopping list
- • 3 Tbs. brown sugar. shopping list
- • 3 Tbs. bourbon. shopping list
- • 2 Tbs. light soy sauce. shopping list
- • 1 Tbs. grated peeled fresh ginger. shopping list
- • 1 Tbs. fresh lime juice. shopping list
- • 3 garlic cloves, minced. shopping list
- • 1/4 tsp. freshly ground black pepper. shopping list
- • A dollop of olive oil. shopping list
- • 1/4 cup thinly sliced green onions. shopping list
- • 1 Tbs. sesame seeds, toasted. shopping list
How to make it
- 1. Combine first 7 ingredients in a large zip-lock plastic bag.
- 2. Add fish to bag; seal. Marinate in refrigerator 1 ½ - 2 hours, turning occasionally.
- 3. Heat a large nonstick skillet over medium-high heat. Coat pan with olive oil.
- 4. Add fish and marinade to pan; cook fish 4 minutes on each side or until fish flakes easily when tested with a fork or until desired degree of doneness. Gently; don’t overcook.
- 5. Place 1 fillet on each of 4 plates; drizzle each serving with about 2 teaspoons sauce.
- 6. Sprinkle each serving with 1 Tbs. green onions and 3/4 teaspoon sesame seeds.
- I lightly sautéed 2 cups of fresh, sliced mushrooms and 1 cup of roasted red bell peppers, sliced in strips. I baked 4 medium Idaho potatoes to be served with sour cream and chives and I did a nice side salad See Photo. Half a loaf of Focaccia for balance See Photo.
