Mushroom And Nori Soup

- • 3 cups mushrooms. Any combinations works; oyster and shiitake are especially good. shopping list
- • Small onion, diced. shopping list
- • clove garlic, minced. shopping list
- • 1 stalk celery, chopped. shopping list
- • 4 cups chicken or veggie stock. shopping list
- • 1 cup cubed firm Tofu, Optional. shopping list
- • ¼ cup light soy. shopping list
- • Juice of one lemon. shopping list
- • Salt and FG pepper to taste. shopping list
- • 1 sheet nori. (Seaweed). shopping list
How to make it
- 1. In a pot over high heat, cook about three cups of mushrooms in a couple of Tbs. of butter until they begin to release their liquid. Add onion, garlic, and chopped celery stalk and cook until the onion is translucent.
- 2. Add four cups of vegetable or chicken stock, the soy sauce, lemon, salt, and pepper.
- 3. Cook until the vegetables are tender. Add Tofu, if using, and cook 30 seconds more.
- 4. Cover and let rest 5 minutes.
- 5. Tear or cut the sheet of nori into strips and put in soup bowls; pour soup over the nori (it will mostly dissolve) and serve.
