How to make it

  • 1. In a pot over high heat, cook about three cups of mushrooms in a couple of Tbs. of butter until they begin to release their liquid. Add onion, garlic, and chopped celery stalk and cook until the onion is translucent.
  • 2. Add four cups of vegetable or chicken stock, the soy sauce, lemon, salt, and pepper.
  • 3. Cook until the vegetables are tender. Add Tofu, if using, and cook 30 seconds more.
  • 4. Cover and let rest 5 minutes.
  • 5. Tear or cut the sheet of nori into strips and put in soup bowls; pour soup over the nori (it will mostly dissolve) and serve.
