Spaghetti With Shimeji Mushroom

- • 1/2 lb (225g) spaghetti. shopping list
- • 3 Tbs. salt; for pasta water. shopping list
- • 3 slices bacon, cut to 1/2" width. shopping list
- • 1 clove garlic, minced. shopping list
- • 1 bunch Shimeji mushrooms, cut the bottom, separated into pieces by hand. Can sub Enoki or Oyster mushrooms. shopping list
- • 1/2 onion, thinly sliced. shopping list
- • 1 Tbsp soy sauce. shopping list
- • 1 Tbs. Mirin. shopping list
- • 1 Tbs. Sake. shopping list
- • 1 Tbs. butter. shopping list
- • 3 green onions, thinly cut. shopping list
- • 4-5 Oba leaves (green shiso leaves), thinly cut. shopping list
- • thinly cut roasted seaweed (nori). shopping list
How to make it
- 1. Boil about 12 cups or 3 littler of water in a big pot and add about 3 Tbsp salt.
- 2. Cook spaghetti according to the instructions on the package.
- 3. Heat a frying pan at medium heat. Add bacon pieces and cook until browned and somewhat crispy.
- 4. Add minced garlic and stir. Add Shimeji mushrooms and sliced onion and cook until tender. See Photo
- 5. Add into the pan a quarter cup of boiling water from the pasta, the soy sauce, Mirin, and Sake, and stir well. Add butter in the sauce. Put the cooked spaghetti into the sauce, then add green onions. Stir for a couple of minutes to coat the spaghetti with the sauce.
- 6. Serve on a plate, and top with thinly cut Oba leaves and seaweed.
- This is Japanese so I do some steamed rice and pickled veggies. A wee jug of Saki tops it off.
