Alfredo Sauce

- • 1 cup heavy cream. shopping list
- • 1 stick butter. shopping list
- • Salt and freshly ground black pepper. shopping list
- • 2 tsp. dried parsley, divided. shopping list
- • A pinch of basil, Optional and to taste. shopping list
- • 1 cup mushrooms, cubed. Optional. shopping list
- • 1 cup freshly grated Parmesan. shopping list
- • 1 cup Mozzarella cheese, grated. shopping list
- • Pasta cooking water, as needed. shopping list
- • 12 oz. (340g) long pasta. I like Capelli d'angelo for this. I used a 16 oz. (450g) pkg. of Angel Hair pasta and there was plenty of sauce. shopping list
How to make it
- 1. Cook the pasta as directed on the package; drain and rinse. Reserve 1 cup of the cooking water.
- 2. In a saucepan or skillet, warm the butter and cream until steaming but not quite simmering.
- 3. Season with salt and pepper.
- 4. Add mushrooms (if using) and 1 tsp. parsley.
- 5. Add the Parmesan and stir until cheese is melted and sauce is smooth and creamy.
- 6. Add the Mozzarella and stir until cheese is melted and sauce is smooth and creamy. Thin with pasta water as needed.
- 7. Toss with pasta to combine.
- 8. Garnish with second tsp. parsley and serve.
- A nice green salad and a carafe of decent dry white and you’re laughing.
