How to make it

  • 1. Cook the pasta as directed on the package; drain and rinse. Reserve 1 cup of the cooking water.
  • 2. In a saucepan or skillet, warm the butter and cream until steaming but not quite simmering.
  • 3. Season with salt and pepper.
  • 4. Add mushrooms (if using) and 1 tsp. parsley.
  • 5. Add the Parmesan and stir until cheese is melted and sauce is smooth and creamy.
  • 6. Add the Mozzarella and stir until cheese is melted and sauce is smooth and creamy. Thin with pasta water as needed.
  • 7. Toss with pasta to combine.
  • 8. Garnish with second tsp. parsley and serve.
  • A nice green salad and a carafe of decent dry white and you’re laughing.
