Crema De Aguacate Sopa

- • 1 Tbs. butter. shopping list
- • 1/2 cup finely chopped onion. shopping list
- • 1 garlic clove, minced. shopping list
- • 4 cups homemade chicken stock. shopping list
- • 2 ripe avocados, seeded, peeled and mashed. shopping list
- • 1 tsp. lime juice. shopping list
- • 2 cups heavy cream. shopping list
- • 1/4 tsp. ground cumin. shopping list
- • Salt and FG Pepper. shopping list
How to make it
- 1. Pick a couple very ripe aguacate. See Photo
- 2. Heat the butter in a medium pot over medium heat. Add the onion and cook for about 3 minutes. Add the garlic and cook for about 30 seconds more.
- 3. Add the chicken broth, lime juice and avocado in the sauce pot and bring to a boil. Reduce the heat to medium and cook for about 7 minutes. Let cool a bit.
- 4. Transfer to the blender and blend until smooth. Return the mixture to the pot. Add the heavy cream, cumin, salt and pepper.
- 5. Cook over medium heat for about 5 minutes.
- 6. Add fresh cilantro and serve warm.
- Cornmeal is a staple in Columbia and variations of corn bread and corn muffins are common. Serve this soup with corn bread and viva Columbia. The usual beverage is beer.
