How to make it

  • 1. Heat your oven to 300 F (150 C).
  • 2. Use a food processor or blender to coarsely crumb the bread evenly.
  • 3. Spread evenly on a rimmed cookie sheet and put in the oven for 10-15 minutes to dry. Do not allow to burn.
  • 4. Remove crumbs from the oven and allow to cool.
  • 5. Run through the food processor again.
  • 6. Crumbs should not be like sand. Leave some texture-don't over-process.
  • 7. Melt butter in a large pan (add any spices you’ve decided to use) and add crumbs and salt and pepper.
  • 8. Stir until evenly coated.
  • 9. Continue stirring over medium heat until the crumbs sound like sand when they hit the bottom of the pan.
  • 10. Cool thoroughly.
  • 11. Store in heavy duty plastic bags with zipper seals.
  • 12. Don't put them in the refrigerator-they won't keep.
  • 13. Store them in a cabinet for up to six months.
