How to make it

  • Mix up the dressing first
  • That way the flavours mingle while you prepare the vegetables
  • Chop the broccoli and cauliflower first
  • Toss into the dressing
  • This can be chilled ‘as is’ for several hours before hand
  • Chop the cucumber and the avocado just before serving
  • Add to salad and mix well
  • Mix and deliberately squash up the avocado a bit.
  • Serve with lime wedges
  • Combine with a red salsa and my high protein vegetarian salad
  • Can be used as a filling for rice wraps or nori wraps
