Spaghetti Bolognaise

- • 1 lb. (500 g.)best quality beef mince. shopping list
- • 2 Tbs. olive oil, divided. shopping list
- • 2 oz. salt pork or bacon. About 2 strips of bacon. shopping list
- • 1 Tbs. butter. shopping list
- • ½ cup peeled & chopped onions. shopping list
- • ½ cup chopped bell pepper. shopping list
- • 2 or 3 cloves garlic, mashed & chopped fine. shopping list
- • 1 tsp. homemade Italian seasoning, recipe posted. you may want a touch more. shopping list
- • 2 bay leaves. shopping list
- • 4-5 thin slices of good pepperoni, chopped. Optional. shopping list
- • Salt & FG pepper to taste. shopping list
- • 2 ½ cups canned, peeled Italian tomatoes, chopped. shopping list
- • 1 small can tomato paste. shopping list
- • 2-3 good sized mushrooms, sliced. This is no big deal. If I have them I add them. shopping list
- • ¼ cup dry red wine. shopping list
- • 1 lb. (500 g.) spaghetti, or other long pasta. shopping list
How to make it
- 1. Combine 1 Tbs. oil and salt pork in a good sized frying pan, cook for 2-3 minutes.
- 2. Add the beef mince and cook until done through. Discard juices. Set aside.
- 3. Put 1 Tbs. oil & butter into a medium size pot, heat & add onions & bell pepper, cook until onions are slightly brown.
- 4. Add the chopped garlic, salt & FG pepper, mushrooms & Italian seasoning, stir well & cook for five minutes.
- 5. Add the beef mince & heat through.
- 6. Add tomatoes, tomato paste & wine, stir well & cook, covered, for about 30 minutes.
- 7. Check for consistency and adjust if necessary. Cook down a bit or add some wine.
- 8. Adjust spices as necessary and fish out the bay leaves.
- 9. Serve with warm, fresh cooked pasta.
- Italians tend to put less sauce on their pasta than Americans. The sauce is to flavor and moisten the pasta, not to drown it. If you need more sauce than this for a pound of cooked pasta maybe you’re using too much sauce.
- A good sprinkle of fresh grated Parmesan cheese is always nice. Fresh garlic bread & a nice green salad go well with this. Don’t forget the vino. I like Chianti here but whatever works for you.
