How to make it

  • Pre heat the oven to 350f. Grease or line a regular muffin pan.
  • Combine the dry ingredients in a large bowl and set aside.
  • Combine the brown sugar with oil, eggs, vanilla and lemon or orange zest.
  • Add the grated zucchini and apple to the sugar mixture and stir to combine.
  • Fold the zucchini mixture into the dry ingredients, until it just comes together (do not over mix). If using nuts, fold in before all the flour is incorporated.
  • Combine the cinnamon sugar topping.
  • Fill up the muffin cups evenly, about 2/3rd's full. Sprinkle the tops with cinnamon sugar and bake for 20-25 minutes. Check doneness with a toothpick, it should be clean or have dry crumbles when done.
  • *This can be baked in a 9x5" loaf pan, check on it at 40-50 minutes may take up to 50-60 minutes.
