Apple-Zucchini Muffins

- 2 cups flour shopping list
- 1 tsp baking powder shopping list
- 1/2 tsp baking soda shopping list
- 1/4 tsp salt shopping list
- 1 tsp cinnamon shopping list
- pinch of nutmeg shopping list
- 1/2 cup packed brown sugar shopping list
- 1/2 cup canola oil shopping list
- 2 eggs shopping list
- 1 tsp vanilla extract shopping list
- 1 Tablespoon of grated lemon or orange zest (optional) shopping list
- 1 cup grated zucchini (about 2 small)--peel if desired shopping list
- 1 cup grated apple (one large apple)--peel if desired shopping list
- --cinnamon sugar Topping-- shopping list
- 1 Tblsp. sugar shopping list
- 1 tsp. cinnamon shopping list
- .**You could fold in 1/4 cup of walnuts if desired, or chocolate chips for kids! shopping list
How to make it
- Pre heat the oven to 350f. Grease or line a regular muffin pan.
- Combine the dry ingredients in a large bowl and set aside.
- Combine the brown sugar with oil, eggs, vanilla and lemon or orange zest.
- Add the grated zucchini and apple to the sugar mixture and stir to combine.
- Fold the zucchini mixture into the dry ingredients, until it just comes together (do not over mix). If using nuts, fold in before all the flour is incorporated.
- Combine the cinnamon sugar topping.
- Fill up the muffin cups evenly, about 2/3rd's full. Sprinkle the tops with cinnamon sugar and bake for 20-25 minutes. Check doneness with a toothpick, it should be clean or have dry crumbles when done.
- *This can be baked in a 9x5" loaf pan, check on it at 40-50 minutes may take up to 50-60 minutes.
