Savory Broccoli Beignets

- For the Beignets: shopping list
- • 2 1/2 cups all-purpose flour. shopping list
- • 2 Tbs. baking powder. shopping list
- • Salt; to taste. shopping list
- • 1 1/2 cups Milk. shopping list
- • 2 Eggs. shopping list
- • 1 large head Broccoli; grated on box grater. shopping list
- • Vegetable Oil; to fry. shopping list
- For the Dipping Sauce: shopping list
- • 1 cup real Mayonnaise. shopping list
- • 1 cup Crème Fraîche. shopping list
- • 3 tsp. Hot Sauce. Optional. shopping list
- • Juice and Zest of 1 Lemon. shopping list
- • 2 Tbs. Capers; roughly chopped. shopping list
- • 1/4 cup Scallions; chopped. shopping list
How to make it
- 1. Preheat 2 inches of Oil in a large Dutch oven to 360 F. (177 C.).
- 2. Combine the Flour, Baking Powder, and Salt in a large bowl and whisk together. Add the Eggs and Milk, and mix until combined. Fold in the Broccoli.
- 3. Scoop out dissert spoon sized portions of the mixture and drop into the oil, frying until golden brown and crisp. Drain on paper towel lined plates and season with salt.
- 4. Serve immediately, while still warm.
- For the Dipping Sauce:
- 5. Whisk together ingredients until combined and adjust seasoning as needed.
