How to make it

  • 1. In heavy saucepan, combine milk, sugar, and salt.
  • 2. Heat over medium heat stirring occasionally until mixture is steaming.
  • 3. Reduce heat to very low. Do not let the mixture boil.
  • 4. In a separate bowl, lightly beat the eggs (egg yolks).
  • 5. Slowly whisk half of the hot mixture into the eggs and then pour back into the saucepan.
  • 6. Cook, stirring constantly, over medium-low heat until it thickens, about 4-5 minutes.
  • 7. Remove from heat, cover and refrigerate until chilled or overnight.
  • 8. When ready to make ice cream, stir heavy cream and vanilla into chilled custard mixture. Add chocolate chips, raisins, candied fruit, etc. if you like.
  • 9. Pour into frozen ice cream canister and follow the ice cream machine instructions.
  • Basic Ice Cream Maker Instructions:
  • 1. Make sure it’s clean.
  • 2. Freeze the ice cream canister.
  • 3. Pour the ice cream mix into the canister.
  • 4. Attach the canister to the electric motor and lower it into the bucket.
  • 5. Plug in the ice cream maker and fill the bucket with ice and salt in layers, about 3 in. ice then ¼ cup salt and repeat until full. Let it run about 30 minutes.
  • 6. Enjoy the ice cream.
