How to make it

  • 1 Chop or crush the peanuts. In a dry pan, roast the peanuts and sesame seeds over high heat until just beginning to darken, about 3-5 min. Remove from the heat and set aside.
  • 2 Boil the noodles according to package directions. Drain, rinse and set aside.
  • 3 Whisk together the oil, soy sauce, sugar, peanut butter, chile paste and the juice of the lime. Peel the ginger and the garlic, then finely grate both into the sauce.
  • 4 Finely chop the onions and toss with the noodles and sauce until well coated.
  • Garnish with the roasted nuts
  • *If Chinese lo mein noodles are unavailable, substitute dried spaghetti.
