How to make it

  • Instructions:
  • Preheat the oven to 400 degrees F/200 degrees C.
  • Cut the mozzarella piece in half, vertically.
  • Slice it in six medium pieces.
  • Take each chicken breast and carve it six times on one side, until you almost reach the other side.
  • In each of the carved spots, place a slice of mozzarella, a slice of cherry tomato and a basil leaf.
  • Sprinkle salt and pepper.
  • Pour the sour cream in a saucepan.
  • Sprinkle fresh dill on the sour cream.
  • Place the two chicken breasts on the sour cream.
  • Cook in the oven for 35 minutes.

    Thanks, Elgourmand. I picked this recipe, because I have made several dishes like this and it brought back some memories. We would pound the chicken delicately , very thin with a mallet and roll the breast up with a fresh basil leaf, a slice of turkey bacon and gruyere cheese. Then roll it in flour and sauté it till a little caramelization or color took place, then finish cooking in the oven and plate it with a nice cream sauce. We called it Roulade of Chicken. Way back (18 years or so) then, we sold it for 17.95 and that was for only 1/2 half of a chicken breast. We sold many nightly. Usually it came with the vegetable of the day or perhaps a medley of vegetables ala ratatouille.
    One other note, when using a mallet to thin out the chicken breast always push the chicken out to the ends with the mallet and of course we would put chicken in clear wrap to make a less of a mess.
