How to make it

  • Heat oven to 350°F . Spray a flute pan generously with cooking spray. melted butter in microwave and pour melted butter in prepared pan, sprinkle brown sugar evenly over butter. Cut pineapple slices in 1/2 and arrange evenly around, the butter and brown sugar mixture will hold them in place, place cherry 2 cherries in-between pineapple slices press gently into brown sugar.
  • Make your cake batter as directed on the box, and add enough water to reserved pineapple juice to measure 1 1/4 cups substituting pineapple juice mixture for the water. Pour batter over pineapple and cherries.
  • Bake 35 to 40 minutes or until toothpick inserted in center comes out clean. Immediately run knife around side of pan to loosen cake. Place heatproof serving plate upside down onto pan; turn plate and pan over. Leave pan over cake 5 minutes so brown sugar topping can drizzle over cake; remove pan. Cool 30 minutes. Serve warm or cool. Store covered in refrigerator.

    Elgourmand, the difference is the Yellow cake mix uses egg yolks, butter , sometimes the whole egg is used and a different kind of pastry wheat flour. I don't think after all the frosting or fruit is added to the cake , it would be a big difference in flavor.
    White cake mix is also a plain cake type. However, it utilizes only egg whites as its main binding ingredient.

    When I was in a commercial kitchen ( I was trained by A chef that had about 25 years experience), we used several flours, like hard flour, soft flour (cakes and pastries) and hard flour was like for French bread, biscuits and for some breading.. I don't remember all the uses. There was also a third type of flour which was a mixture of soft and hard flours. I don't remember all the different recipes and what kind of flour they called for . I do remember if you used the wrong flour the Bakery Chef could tell it.
    I do remember the hard flour is what we made noodles out of. In fact the noodles were egg yolks and flour worked to a tough thick dough, then rolled out and cut thin with a knife or put thru a pasta maker. That is the best I can remember right now.
    If you can get Swans cake flour, that would be better, but to answer your question, I would make the white cake mix and I think it will be fine, in this flavorful cake recipe with all the pineapple. You could also add a few drops of yellow food coloring, if you desire the yellow cake.

    Bakerme, I think you would need to make the recipe for the 9 inch round pan twice to fill a bundt pan. The main problem would be not to overcook or undercook the cake, check it often with the toothpick method... I would use the temp it says for the original 9 inch pan recipe. The recipe you have , made twice, will give you roughly 12 cups of batter which will fill up a 10 inch bundt pan.. A cake mix bought like Duncan Hines ranges from 15 or are so ozs. to 18.5 ozs. There is a little difference in wet ounces and dry ounces, keep that that in mine also.
    In the English and US systems, there is some ambiguity and confusion with regard to the ounce because the same word 'ounce' is used for both weight and volume.

    One ounce (mass or weight) is equal to 28.35 grams.
    One fluid ounce is equal to about 29.57 cubic centimeters or milliliters. This can cause problems iwith baking in a commercial setting.. I chose this recipe as you said ,"It makes a very pretty presentation and I was always taught we eat with our eyes as well as taste..

    I have a from scratch pineapple upside-down cake recipe that makes one 9-inch round cake. Do you think that's enough batter to make in a Bundt pan, as shown in your photo? Made that way makes a very pretty presentation and I would love to try it!

    Your timing is perfect. I went out back and picked two medium pineapples just yesterday. Don't know what Golden Cake mix is. Will an ordinary vanilla cake do? Cake will be made from scratch so don't give me another brand name. Thanks.
