How to make it

  • Preheat oven to 375 degrees.
  • Mix first nine ingredients together in a large mixing bowl and then gently form meatballs to racquetball size (between ping-pong and golf ball), being careful not to overwork the meat.
  • Roll the meatballs in the additional fine bread crumbs, to coat the outside.
  • Place coated meatballs on lightly greased baking sheet and roast in the oven for 20-25 minutes.
  • Add meatballs to your sauce and simmer for 10-15 minutes. The coating will be absorbed by the sauce and may thicken it a little so adjust your recipe accordingly.
  • You may substitute bulk Italian sausage for the ground pork, just cut back on the pepper flakes and dried herbs.
