Italian Meatballs

- 1 lbs ground beef (80/20) shopping list
- 1/4 lbs ground pork shopping list
- 1 egg white shopping list
- 1/3 cup shredded Parmesan cheese shopping list
- 2/3 cup prepared breadcrumbs shopping list
- 5 cloves garlic (minced) shopping list
- 1/4 cup fresh parsley (chopped) shopping list
- 1 Tbsp dried Italian herb mix shopping list
- Red pepper flakes (to taste, I use 3/4 tsp) shopping list
- 2 tsp sea salt shopping list
- Additional ¾ to 1 Cup of fine bread crumbs (prepared or panko) shopping list
How to make it
- Preheat oven to 375 degrees.
- Mix first nine ingredients together in a large mixing bowl and then gently form meatballs to racquetball size (between ping-pong and golf ball), being careful not to overwork the meat.
- Roll the meatballs in the additional fine bread crumbs, to coat the outside.
- Place coated meatballs on lightly greased baking sheet and roast in the oven for 20-25 minutes.
- Add meatballs to your sauce and simmer for 10-15 minutes. The coating will be absorbed by the sauce and may thicken it a little so adjust your recipe accordingly.
- You may substitute bulk Italian sausage for the ground pork, just cut back on the pepper flakes and dried herbs.
