How to make it

  • In a baking dish, mix the cornstarch into the soy sauce and add the ginger and garlic. Add the salmon to the dish, soaking both sides in the marinade and letting it sit in the fridge for a half hour, turning once.
  • While the salmon is marinating, make your Sriracha sauce. Mix together the mayonnaise, sriracha and evaporated milk, tasting to see if you want to add more sriracha.
  • Preheat the oven to 400F. Place your baking dish with the salmon fillets into the oven and bake until the fish flakes easily with a fork, about 20 minutes (depending on the thickness of your fillets).
  • Serve salmon immediately with the Sriracha sauce.

    Don't know how I missed this when you posted it. I love salmon but it costs the earth here (when I can find it). I may try this with snapper. It won't be the same but it should be really tasty.
