Artichoke Cannellini Spread Recipe
This was "discovered" by accident, a mistake made when attempting to recreate something from Cooking Light. A nice departure from the typical oily, cheesey and fatty spreads.

Ingredients
  • 1 can artichoke hearts, drained
  • 1 (16-ounce) can cannellini or other white beans, drained
  • 1/4 cup chopped fresh parsley
  • 2 tablespoons Italian-seasoned breadcrumbs
  • 2 tablespoons (1/2 ounce) finely grated Parmesan cheese
  • 2 tablespoons water
  • 1 tablespoon pesto sauce
  • 1 tablespoon balsamic vinegar

Directions
  1. Chop artichoke hearts
  2. Mash beans in a medium bowl; stir in parsley and remaining ingredients.
  3. Spread on crackers.

Fastastic dip! Loved it! I used a mini food processor to make and very simple and easy! Super nutritous too!


What a great accident!!!! Even better to let flavors marry for 30 minutes before serving. Yum.


This looks really yummy! I bet it would work well on pasta too.

This is a super delicious/nutrious dip, if a person was a garlic lover (like me) they could add chopped fresh garlic, yum!
