How to make it

  • Heat the oil in a pan/frying pan, add the onion and garlic, cover and cook over a low medium heat for 5 to 10 minutes or so or until soft;
  • Add the remaining ingredients, mix in well and bring to the boil;
  • Reduce heat to low and cook, stirring occasionally, for a further 2 to 3 minutes or so;
  • Reduce the heat, season to taste with salt and pepper and leave to simmer for a further 10 to 15 minutes or so or until relish thickens to consistency desired;
  • Leave to cool
