How to make it

  • Cover bottom of small cookie tray (12 x 15) with a sheet of parchment paper
  • Measure 7 cups of puffed millet in to a large bowl
  • Melt the chocolate chips in a small glass bowl, two minutes. Stir briefly (there still may be lumps) and spread evenly over the parchment with a silicon spatula
  • Melt and combine butter, syrup, brown sugar and cocoa in a saucepan
  • Stir constantly over medium heat until it comes to a boil (you may use the same spatula, with bits of chocolate still on the blade)
  • Boil for one scant minute and remove from the heat
  • Stir in the vanilla and whey powder
  • Pour over the millet and fold over using the spatula until the millet is evenly coated
  • Spread the millet evenly over the cookie tray, pressing down lightly
  • Refrigerate for ten minutes to set then cut with a sharp knife in to 24 squares.
