Choco Millet Protein Bars

- 240 grams semi sweet chocolate chips shopping list
- 1/2 cup unsalted butter shopping list
- 1/2 cup corn syrup or honey shopping list
- 1/2 cup Splenda half brown sugar shopping list
- 7 tablespoons cocoa shopping list
- 1/2 teaspoon vanilla extract shopping list
- 1/3 cup whey protein isolate shopping list
- 7 cups puffed millet shopping list
How to make it
- Cover bottom of small cookie tray (12 x 15) with a sheet of parchment paper
- Measure 7 cups of puffed millet in to a large bowl
- Melt the chocolate chips in a small glass bowl, two minutes. Stir briefly (there still may be lumps) and spread evenly over the parchment with a silicon spatula
- Melt and combine butter, syrup, brown sugar and cocoa in a saucepan
- Stir constantly over medium heat until it comes to a boil (you may use the same spatula, with bits of chocolate still on the blade)
- Boil for one scant minute and remove from the heat
- Stir in the vanilla and whey powder
- Pour over the millet and fold over using the spatula until the millet is evenly coated
- Spread the millet evenly over the cookie tray, pressing down lightly
- Refrigerate for ten minutes to set then cut with a sharp knife in to 24 squares.
