Summer Skillet Dinner

- 1/2 lb ground beef or sausage shopping list
- 2 med zucchini, sliced into rounds shopping list
- 1 small onion diced shopping list
- 1 can diced tomatoes, seasoned if desired shopping list
- Old Bay Seasoning, or seasonings of your choice shopping list
- cheese, grated (such as mozzarella and/or Parmesan) shopping list
How to make it
- Fry the meat, crumbling it into small pieces as it cooks. Remove from skillet and set aside. In same skillet, sauté the zucchini and onion, until beginning to brown. Add the meat and can of tomatoes, and appropriate and desired seasonings, including salt and pepper. Heat through. Top with cheese, cover, and gently heat to melt cheese.
- May sub eggs instead of the meat. May add cottage cheese. May top with biscuits, or Bisquick, or bread crumbs. If you have fresh tomatoes, use them instead of canned. May add other veggies, whatever is abundant from your garden or farmers market.
