Simple Crust-less Skillet Quiche

- Ingredients: shopping list
- • 6 large eggs, beaten. shopping list
- • 1 cup frozen mixed vegetables, or make up your own mix. shopping list
- • 1 cup (4 oz.) grated Swiss or cheddar cheese. Cheese of choice and up to ½ cup, depending on if your choice is firm or soft. shopping list
- • 1 cup Half and Half or light cream. shopping list
- • 2 Tbs. butter. shopping list
- • 1 Tbs. minced onion. shopping list
- • 1 medium bell pepper, seeded and course chopped. shopping list
- • ½ tsp. salt, to taste. shopping list
- • ½-1 tsp. dried marjoram or oregano leaves, crushed. shopping list
- • 1 cup of sliced mushrooms or a hand full of Enoki mushrooms, cut once or twice. shopping list
- • 1 medium clove of garlic, fine minced, to taste. shopping list
- • 1/8 tsp. pepper, to taste. shopping list
- • Fresh dill (optional). shopping list
How to make it
- 1. Beat together all ingredients except mushrooms, butter and dill until well blended.
- 2. In 10 inch skillet, over very low heat, melt butter.
- 3. Pour in egg mixture and distribute ingredients evenly.
- 4. Cook, covered, without stirring over low heat until eggs are almost set, about 15-18 minutes.
- 5. Remove from heat, sprinkle the sliced or Enoki mushrooms over the top, cover and let stand until knife inserted in center comes out clean, 10 to 15 minutes. I cover the skillet lid with a folded dish towel to keep in the heat and set the quiche.
- 6. To serve, cut in wedges or, if you must, spoon out of pan.
- 7. Garnish with fresh dill if desired.
- A nice mixed green salad and some crusty bread go well. We’re trying to ease up on the gluten a bit so I did a mix of ½ wild rice and ½ white rice this time.
