How to make it

  • 1. Beat together all ingredients except mushrooms, butter and dill until well blended.
  • 2. In 10 inch skillet, over very low heat, melt butter.
  • 3. Pour in egg mixture and distribute ingredients evenly.
  • 4. Cook, covered, without stirring over low heat until eggs are almost set, about 15-18 minutes.
  • 5. Remove from heat, sprinkle the sliced or Enoki mushrooms over the top, cover and let stand until knife inserted in center comes out clean, 10 to 15 minutes. I cover the skillet lid with a folded dish towel to keep in the heat and set the quiche.
  • 6. To serve, cut in wedges or, if you must, spoon out of pan.
  • 7. Garnish with fresh dill if desired.
  • A nice mixed green salad and some crusty bread go well. We’re trying to ease up on the gluten a bit so I did a mix of ½ wild rice and ½ white rice this time.
