How to make it

  • Peel cantaloupe and cut into chunks.
  • Place in a food processor and process at high speed until pureed.
  • Add lime juice and salt and blend again.
  • Refrigerate until ready to serve.
  • Divide soup into two large bowls or smaller serving vessels if having as an appetizer.
  • Chop prosciutto into small bits.
  • Garnish soup with proscuitto and a drizzle of balsamic vinegar.
  • Enjoy.

    We have melon+prosciutto all the time as a starter back in Portugal . This is a very interesting version of that. Will bookmark to try it. Thanks for sharing.
