Zuppa Toscana With Coconut Milk

- 4 pieces of bacon cooked and crumbled (only used for topping) shopping list
- 1 small onion, chopped shopping list
- 2 large carrots, chopped shopping list
- 3 cloves garlic, minced shopping list
- 1 tsp. Italian seasoning shopping list
- 12 oz. Italian Sausage, sliced if already cooked I used Trader Joe's fully cooked Italian chicken Sausage shopping list
- 5 cups chicken stock shopping list
- 2 medium sweet potatoes (not the really large, if so use 1), diced into small cubes shopping list
- 2-3 cups kale, chopped shopping list
- 1 cup coconut milk shopping list
How to make it
- Heat oil in soup pot over medium heat and add onion and carrot. Cook about 5 minutes until soft and add garlic and Italian seasoning. Cook for about 1-2 more minutes. See Photo
- Add sausage See Photo. Cook a couple minutes, or if using raw, until done and crumbled See Photo. Add chicken broth and simmer 30 minutes. Add sweet potatoes and kale and simmer 30 more minutes or until the potatoes are tender See Photo. Lastly turn heat down to low, add coconut milk and cook for 5 more minutes until heated through. Enjoy!!
