Slow Cooked Creamed Corn With Peppers and Onion

- 4 slices bacon, sliced, diced and cooked, remove grease shopping list
- 2 slices ham, chopped and cooked in bacon grease shopping list
- 4 1/2 cups whole kernel corn (3 cans, well drained) shopping list
- 1/2 red bell pepper, chopped, for color shopping list
- 1/2 green bell pepper, for color shopping list
- 1/2 of a red onion, for color shopping list
- 1/2 cup half-and-half, or butter milk shopping list
- 2 teaspoon fresh ground pink himalayan salt shopping list
- 1 teaspoon fresh ground black pepper shopping list
- 1 (8 ounce) cream cheese shopping list
How to make it
- With kitchen shears cut bacon strips into 1/2 inch strips, the short way.
- With same shears cut the ham slices into 1/2 inch squares, or if using thick ham just about 1/2 a cup of 1/2 inch squares of ham will work.
- Place bacon and ham in a large skillet and cook over medium-high heat, stirring occasionally, until evenly browned, about 10 minutes.
- Combine the cream cheese, half and half, corn, red bell pepper, green pepper, red onion, salt and black pepper, in the slow cooker; stir well.
- Rinse the bacon and ham, when finished cooking; add to crock pot corn mixture.
- Cook on High for 1 1/2 to 2 hours.
- You may if you like top with bacon bits and or deep fried onions if you like, not a requirement, just a pretty. It does not last long enough at our home to worry about it.
