Ingredients

  • How do these substitutes work? Eggs actually help keep things together. Without eggs wouldn't you have a crumbly mess? shopping list
  • Just like eggs these ingredients act as a binder due to their constancy but be sure to use the correct one for your dish for example you wouldn't use more oil if the recipe already calls for oil shopping list
  • you would want to use applesauce or another binder instead don't use more of whatever your recipe calls for also depending on what the recipe is use better judgement for taste will this go with my other ingredents or will they clash shopping list
  • 1. applesauce shopping list
  • Use 1/4 cup of unsweetened applesauce in place of one egg in most baking recipes. Some sources say to mix it with 1/2 teaspoon of baking powder. If all you have is sweetened applesauce, then simply reduce the amount of sugar in the recipe. applesauce is also a popular healthy replacement for oil in many baked goods. shopping list
  • 2. banana shopping list
  • Use 1/4 cup of mashed banana (from about half a banana) instead of one egg when baking. Note that this may impart a mild banana flavor to whatever you are cooking, which could be a good thing. shopping list
  • 3. Flaxseeds shopping list
  • Believe it or not, hearty-healthy flaxseeds can be used as an egg substitute! Simply mix 1 tablespoon of ground flaxseeds with 3 tablespoons of water until fully absorbed and viscous. Use in place of one egg. (You can use pre-ground flaxseeds or grind them yourself in a spice or coffee grinder.) shopping list
  • 4. Vegetable oil shopping list
  • Typically 1/4 cup of vegetable oil can be substituted for one egg when baking. If you are short more than one egg, you will want to try another method, as any more vegetable oil may make the recipe too oily or greasy. shopping list
  • 5. Water, oil and baking powder shopping list
  • Whisk together 2 tablespoons of water, 1 teaspoon of oil (like corn or vegetable oil) and 2 teaspoons of baking powder. Use this in place of one egg. When used in cookies and other baked goods, it works so well no one would ever know. shopping list
  • 6. Aquafaba shopping list
  • The hot new egg replacement is bean juice — specifically the liquid that comes in your can of chickpeas. It may not work for everything, but if your recipe calls for egg whites, whip up some aquafaba instead (about 3 tablespoons per replaced egg). For best results, use an unsalted variety. shopping list
  • After successfully using these food substitutions, you may employ them for more than emergency backup in the future. They are all vegan alternatives and, with the exception of the vegetable oil, are more heart-healthy than eggs. Using banana, applesauce or other puréed fruit in baked goods is a wonderful tactic to boost flavor and make them incredibly moist. Talk about a happy accident! shopping list

How to make it

  • Comments:
  • Applesauce works best for things like breads and sweet breads. I prefer the water, oil and baking powder mixture for pancakes and waffles. Egg Replacer can be used too, but it takes some know how. If you are some health nut that read an article about the dangers of hormones in chickens and are trying to go egg free, just use an egg and stop whining about how bad your brownies turned out.
  • I bought a box of Betty Crocker pizza crust mix. But when I started to prepare the crust, I realized I used my last egg for breakfast. I used the applesauce and it was delicious! Thanks.
  • I use applesauce all the time, try it again in a cake mix, I started using applesauce in the 70s and never had a bad cake yet, also try soda no water or egg. soda is great in pancakes as well just let sit for about an hour to over night they come out so fluffy.
  • Here we always just used about a tablespoon each of corn starch to replace and egg or two when I grew up on the farm. It worked just fine with cake mixes back then. I'd never heard of any of these. Would be leery of adding that baking powder unless it is the aluminum free kind.
  • I used plain yogurt, roughly the same amount an egg would take up, to make my cake, and it turned out fine.
  • I have also just used one egg (instead of two) in CC cookies, at first by accident, but now on purpose, a more "shortbread" texture, but good. I also usually put an envelope of dry pudding mix (small) of any flavor, whether I use two eggs or only one.
