Chicken Corn Chowder

- About 2 cups of cooked chicken, cut into bite size pieces (I used 1 rotisserie chicken from the grocery store, or approximately 3 breasts) shopping list
- 1 c. diced celery shopping list
- 1/2 c. diced onion shopping list
- 1/4 c. butter shopping list
- 2 Tbsp. flour shopping list
- 2 medium potatoes, peeled and cubed (about 2 cups) shopping list
- 1 1/2 cups frozen corn, thawed shopping list
- 2 cups chicken stock or broth shopping list
- 1 cup milk shopping list
How to make it
- 1. Boil or bake chicken breast ahead of time to save time, or cut up a rotisserie chicken.
- 2. Melt butter in the bottom of 3 quart saucepan. Add onions and celery and cook until soft, but not brown.
- 3. Stir in flour and let cook for about 1 minute.
- 4. Slowly add in the stock and milk mixture.
- 5. Add potatoes and simmer for approximately 15 to 20 minutes.
- 6. Add chicken, corn, and salt and pepper to taste, and heat through.
