How to make it

  • 1. Boil or bake chicken breast ahead of time to save time, or cut up a rotisserie chicken.
  • 2. Melt butter in the bottom of 3 quart saucepan. Add onions and celery and cook until soft, but not brown.
  • 3. Stir in flour and let cook for about 1 minute.
  • 4. Slowly add in the stock and milk mixture.
  • 5. Add potatoes and simmer for approximately 15 to 20 minutes.
  • 6. Add chicken, corn, and salt and pepper to taste, and heat through.
