How to make it

  • Crisp up the bacon in the oven or in a frying pan, drain, cool and cut into chunks
  • Caramelize the onions and brown the ground beef; drain and set aside.
  • In a bowl, mix the eggs, 8 oz of the cheese, cream, tomato paste, Valencia sauce to taste, salt and pepper and whisk until smooth.
  • Spread the beef and onion mixture in the bottom of a greased (or no-stick sprayed) 9x13 dish.
  • Spread the bacon pieces across the meat mixture.
  • Pour the egg mixture evenly over all of it.
  • Top with the remaining cheese.
  • Bake at 350 for 35 minutes.
  • Let stand for a few minutes prior to serving.
