Bacon Cheeseburger Casserole

- 2 lbs minced (ground) beef shopping list
- 1 onion, chopped shopping list
- 1 lb bacon shopping list
- 12 oz shredded cheese, divided shopping list
- 6 oz tomato paste shopping list
- Valencia (mexican) pepper sauce (or other you like) shopping list
- 8 eggs shopping list
- 1 cup heavy cream shopping list
- salt and pepper to taste shopping list
How to make it
- Crisp up the bacon in the oven or in a frying pan, drain, cool and cut into chunks
- Caramelize the onions and brown the ground beef; drain and set aside.
- In a bowl, mix the eggs, 8 oz of the cheese, cream, tomato paste, Valencia sauce to taste, salt and pepper and whisk until smooth.
- Spread the beef and onion mixture in the bottom of a greased (or no-stick sprayed) 9x13 dish.
- Spread the bacon pieces across the meat mixture.
- Pour the egg mixture evenly over all of it.
- Top with the remaining cheese.
- Bake at 350 for 35 minutes.
- Let stand for a few minutes prior to serving.
