How to make it

  • Bring chicken broth to boil, add quinoa, reduce heat, cover. Simmer over very low heat 15-20 minutes or quinoa is cooked. Meanwhile, sauté mushrooms (and onions) and steam carrots (in microwave). Combine all the ingredients. Place in oven and top with additional cheese if desired, or serve from stovetop. Leftovers freeze well. I freeze in serving size containers for a quick lunch.
