Quinoa Chicken Casserole

- 3 cups chicken broth shopping list
- 1.5 cups uncooked quinoa, rinsed if necessary shopping list
- Garlic and salt to taste shopping list
- Mushrooms, cleaned and sliced shopping list
- butter or oil for sautéing shopping list
- Onions, sliced (optional) shopping list
- carrots, sliced, steamed shopping list
- Peas, frozen shopping list
- 1/2 cup grated Parmesan cheese (or cheese of choice) shopping list
How to make it
- Bring chicken broth to boil, add quinoa, reduce heat, cover. Simmer over very low heat 15-20 minutes or quinoa is cooked. Meanwhile, sauté mushrooms (and onions) and steam carrots (in microwave). Combine all the ingredients. Place in oven and top with additional cheese if desired, or serve from stovetop. Leftovers freeze well. I freeze in serving size containers for a quick lunch.
