How to make it

  • Heat half the butter in a frying pan, add the bacon rashers, if using, and cook on a lowish heat for some 4 to 5 minutes or so or until starting to turn golden and crisp up;
  • Remove, dice and set aside;
  • Add the rest of the butter, the onions, sugar and thyme and cook over a gentle heat for some 8 to10 minutes until the onions are tender;
  • Increase the heat to high and, stirring occasionally, cook them until they start to turn golden-brown,
  • Pour in the vinegar and cook until it has evaporated to thick syrup;
  • Season to taste with salt and pepper and remove the thyme;
  • Place in a serving dish and sprinkle over the bacon bits.
