30 Minute Stacked Chicken Enchiladas

- 1 T vegetable oil shopping list
- 1 onion chopped finely shopping list
- 3 T chili powder shopping list
- 2 t ground cumin shopping list
- 2 8 oz cans tomato sauce shopping list
- 3/4 c low-sodium chicken broth shopping list
- 1/2 t sal1 rotisserie chicken skin removed & meat bite size shopping list
- 1&1/2 c shredded cheese Mexican blend or cheddar or pepper jack shopping list
- 2 T chopped fresh cilantro shopping list
- 12 6 inch tortillas shopping list
How to make it
- 1. Adjust oven rack to middle position & heat to 400 degrees. Heat oil in large saucepan over med-high heat until shimmering. Cook onion until softened, about 5 mins. Add chili powder & cumin & cook until fragrant, about 30 secs. Stir in tomato sauce, broth, & salt & simmer until slightly thickened, about 5 mins. Cover & keep warm.
- 2. Toss chicken, 1/4 c sauce, 1 c cheese & cilantro in bowl. Spread 1/2 c sauce in 8-inch square baking dish. Stack tortilla on plate & microwave covered until pliable, about 1 min. Place 4 tortillason bottom of dish & cover w half of chicken mixture. Top w 4 tortillas & half remaining sauce. Cover w remaining chicken mixture, tortillas, sauce & cheese.
- 3. Wrap w foil & bake until heated through, 15 mins. Remove foil & bake until cheese is bubbly & brown, about 5 mins.
