How to make it

  • 1. Pat steak tips dry w paper towels & season w s&p. Cook bacon in Dutch oven over medium-high heat until crisp, about 5 mins. Idling slotted spoon, transfer bacon to paper towel-lined plate. Cook steak tips in bacon fat until well browned all over, about 5 mins. Transfer to plate & tent w foil.
  • 2. Add mushrooms & onions to empty pot & cook until browned, about 5 mins; transfer to medium bowl. Stir butter & flour into empty pot & cook until golden, 1-2 mins. Stir in wine, broth, thyme, & beef along w any accumulated beef juices & bring to a boil. Reduce heat to medium-low & summer, covered, until sauce is slightly thickened, about 10 mins. Stir in bacon, onions & mushrooms & serve.
