How to make it

  • Clean the asparagus and discard 3/4 inch from the bottom
  • Cut off the tips and reserve
  • Fry the onion in big a sauce pan in the butter and oil on medium heat
  • When the onion is soft add the asparagus stalks and cook 4-5 min.
  • Season lightly with salt, add the veg. stock and simmer for 2 hours
  • Put the contents of the saucepan through a sieve or blender.
  • Blend till smooth
  • Return the creamed soup back to the saucepan
  • Add the asparagus tips, cook very slowly for 5 min.
  • Serve in soup plates, sprinkle with finely chopped parsley
  • and Parmesan cheese.
