Zuppa Di Asparagi (asparagus Soup)

- 1 Bunch asparagus shopping list
- 3 onions chopped shopping list
- 1 tbsp. butter shopping list
- 4 tbsp. olive oil shopping list
- salt shopping list
- 9 cups of vegetable broth shopping list
- 1 sprig parsley shopping list
- 1/2 cup Parmesan cheese shopping list
How to make it
- Clean the asparagus and discard 3/4 inch from the bottom
- Cut off the tips and reserve
- Fry the onion in big a sauce pan in the butter and oil on medium heat
- When the onion is soft add the asparagus stalks and cook 4-5 min.
- Season lightly with salt, add the veg. stock and simmer for 2 hours
- Put the contents of the saucepan through a sieve or blender.
- Blend till smooth
- Return the creamed soup back to the saucepan
- Add the asparagus tips, cook very slowly for 5 min.
- Serve in soup plates, sprinkle with finely chopped parsley
- and Parmesan cheese.

- how i make it. Back then not many wrote their recipes down,
- you just watched and hopefully retained what you saw:)))
