Spinach And Tomato Tortellini In A Creamy Parmesan Sauce

- 1 16 oz package of cheese tortellini (or any kind you have) shopping list
- 3 cloves garlic, chopped shopping list
- 1 small onion, chopped shopping list
- 2 medium tomatoes, chopped shopping list
- 3 cups fresh spinach, roughly chopped shopping list
- 8 leaves fresh basil, juilienned shopping list
- S&P to taste shopping list
- 1 cup milk shopping list
- 3/4 cup heavy cream shopping list
- 3 Tbs. flour shopping list
- 1/4 cup parmesan shopping list
- Olive oil for cooking shopping list
How to make it
- Cook the tortellini per package directions. Drain and set aside.
- Heat olive oil up in a very large skillet over medium heat and cook and stir onion and garlic until soft. Add in tomatoes and spinach and cook about a minute until the spinach starts to wilt. Stir in fresh basil and add S&P to taste.
- In a jar or a container with a tight fitting lid add milk, cream and flour. Shake well. Add tortellini into the spinach and tomato pan along with the milk/flour mixture and stir. Add in parmesan cheese and cook until the sauce is thickened and the tortellini are heated through. Taste sauce and add more salt if needed. Serve and Enjoy! :)
