Macatawa Mermaid Cheesecake

- Crust: shopping list
- 2 cups cinnamon cookies or graham crackers, ground fine shopping list
- 1/3 cup light brown sugar, lightly packed shopping list
- 6 Tbsp. melted butter shopping list
- Cheesecake: shopping list
- 2 pounds cream cheese, soft shopping list
- 1 1/4 cups sugar shopping list
- 1/4 cup AP flour shopping list
- 4 large eggs shopping list
- 3 Tbsp. dark rum shopping list
- 1 Tbsp. vanilla shopping list
- 3/4 cup coconut cream shopping list
- 1/2 cup shopping list
- cocoa nibs, ground fine shopping list
- Ganache: shopping list
- 3/4 cup heavy cream shopping list
- 10 oz. bittersweet chocolate, chopped shopping list
- 3/4 cup toasted sweet coconut shopping list
How to make it
- Crust:
- Mix cookie crumbs, sugar, and melted butter completely.
- Butter 9-10" spring-pan; press crumb mixture evenly onto sides & bottom.
- Set in freezer.
- Cheesecake: Preheat oven to 450^.
- In a large bowl, beat cream cheese until fluffy.
- Add sugar and flour.
- Add eggs one at a time, scraping down sides of bowl.
- Add rum, vanilla, and coconut cream.
- Fold in cocoa nibs with spatula.
- Pour into prepared pan and bake at 450^ for 15 minutes.
- Reduce temperature to 250^, leaving pan in oven.
- Continue baking for 1 hour . Cool completely on rack. Chill.
- Before serving, make ganache and pour over cake.
- Sprinkle toasted coconut over ganache and chill for at least 30 minutes.
