How to make it

  • Crust:
  • Mix cookie crumbs, sugar, and melted butter completely.
  • Butter 9-10" spring-pan; press crumb mixture evenly onto sides & bottom.
  • Set in freezer.
  • Cheesecake: Preheat oven to 450^.
  • In a large bowl, beat cream cheese until fluffy.
  • Add sugar and flour.
  • Add eggs one at a time, scraping down sides of bowl.
  • Add rum, vanilla, and coconut cream.
  • Fold in cocoa nibs with spatula.
  • Pour into prepared pan and bake at 450^ for 15 minutes.
  • Reduce temperature to 250^, leaving pan in oven.
  • Continue baking for 1 hour . Cool completely on rack. Chill.
  • Before serving, make ganache and pour over cake.
  • Sprinkle toasted coconut over ganache and chill for at least 30 minutes.
