Super Sun-dried Tomato Penne and Shrimp

- 8 ounces penne rigate, cooked according to package directions shopping list
- 1 pound frozen medium shrimp,thawed and well-drained shopping list
- 2 tablespoons olive oil shopping list
- 1/3-1/2 cup white wine shopping list
- 2/3 cup Sun-dried tomato sauce and spread (I use Classico Creations) shopping list
- parmesan cheese, grated, for topping shopping list
- Side salad and bread to serve shopping list
How to make it
- In a medium skillet, cook shrimp in olive oil for 2-3 minutes, or until shrimp are heated through.
- Add wine, cook and stir until most of the wine has evaporated. (Not more than a minute)
- Add the sun-dried tomato sauce and mix thoroughly.
- In a large bowl, gently toss hot cooked penne, sun-dried tomato sauce and shrimp.
- Dress with grated parmesan cheese.
- Serve immediately.
