How to make it

  • Start by toasting your almonds and coconut flakes in a small, dry skillet on low heat until just starting to brown and smell nutty. Set aside.
  • Heat up 1 cup of coconut milk, bringing to a simmer. Add in your oatmeal, turn the heat down to medium-low and stir to combine, let cook for a minute and add more coconut milk if it is too thick. Turn off heat and stir in desired amount of honey.
  • To assemble, divide oatmeal into two bowls, top with an equal amount of mango, coconut flakes and almonds. Drizzle with a touch more honey and dig in!
  • *I had originally thought this would be a recipe for 1 serving, so my picture is the whole recipe in one bowl, but I ended up only being able to eat half, so I changed the servings to 2 :)
