Seafood Thermidor

- 2 tbs Earth Balance® or butter shopping list
- 3 lg cremini mushrooms cut in half and sliced, about 2 oz. shopping list
- 1/2 cup white wine shopping list
- 6 shrimp size 31-40 shelled and cut in half, about 3 oz. Reserve shells. shopping list
- 16 bay scallops, tough mussel removed shopping list
- 2 oz fresh crab shopping list
- 2 tbs flour shopping list
- 1/4 tsp salt shopping list
- generous pinch red pepper flakes or more to taste shopping list
- 1 cup skim milk shopping list
- paprika shopping list
How to make it
- Melt Earth Balance® in a skillet and add mushrooms, toss to coat.
- Add the wine, red pepper flakes and reserved shells and simmer for 15 minutes.
- Add the flour to the milk and mix well.
- Remove the shells from the pan.
- Slowly add the milk mixture, stirring constantly until thickened.
- Season with salt.
- Pour into one large or two small prepared ramekins and sprinkle with paprika.
- Bake @ 400 for 15-20 minute or until the top is slightly brown.
- Serve as is with plenty of crusty bread or over linguini.
- Any type of shellfish will work....use what you like and make it your own.
