How to make it

  • *Roast Beets and Cauliflower separately but at the same time to save time :) Other wise add about 20 minutes onto the total cook time*
  • Preheat oven to 400 degrees. Add beets to a greased pan and sprinkle with salt and pepper and olive oil and toss to coat. Roast for about 25 minutes or until tender. Set aside.
  • Add cauliflower, shallot, and garlic to another greased pan and sprinkle with S&P and balsamic and toss to coat. Roast for 15-20 until cauliflower is tender. Remove from oven and mix in the cooked beets.
  • Meanwhile mix together chopped parsley, lemon zest and lemon juice. Sprinkle on top of the of the beets and cauliflower, then sprinkle with the optional kalamata olives and shaved parmesan. Enjoy!!
