How to make it

  • Measure 1 2/3 cups almonds and process to a fine grind. Finely chop remaining almonds and set aside. Mix flour, sugar and ground almonds. With fingers work in butter and vanilla extract until mixture cleans the bowl. Form into large ball, wrap in plastic wrap and chill one hour. Heat oven to 350 degrees and roll dough into about 1 1/4" balls and then gently form into crescent (moon) shapes. While shaping into crescents, gently roll cookies in mixture of sugar and cinnamon and dip tops of cookies into reserved chopped nuts, pressing gently. Place on cookie sheet and complete crescent formation of each cookie for baking so that they are uniform in shape. Bake at 350 degrees until lightly browned, 12 - 15 minutes. Cool on pan about 10 minutes or they will break.
