Olive Spinach Purses

- 4 scallions shopping list
- 1 10 oz. package frozen chopped spinach, thawed and squeezed really dry shopping list
- 4 oz goat cheese shopping list
- 4 kalamata olives, chopped shopping list
- 2 T. chopped dill shopping list
- 4 12 x 17" sheets phyllo dough (room temp) shopping list
How to make it
- Preheat oven to 375 degree.
- Spray baking sheet with nonstick spray.
- Cut green tops off scallions and cook in boiling water 2 minutes. Drain and plunge in ice water. Drain and set aside. Finely chop white part of scallions, spinach, goat cheese, olives and dill in a bowl.
- Cover phyllo sheets with plastic wrap to keep from drying out. Place 1 phyllo sheet on a clean, dry work surface, lightly spray with nonstick spray. Top with second sheet; cut into 4 rectangles. Spoon 1/8 of the filling in the center of each square. Gather the 4 corners and crimp to seal, forming a purse. Tie one scallion strip around the top of each purse. Repeat with remaining phyllo, filling and tying scallion strips.
- Bake until golden brown and heated through, about 12 minutes.
