Rhubarb Marshmallow Cake

- 5 c. diced rhubarb shopping list
- 1/2 c. sugar shopping list
- 1 small box raspberry, cherry or strawberry Jello shopping list
- 2 c. miniature marshmallows shopping list
- 1 box double layer white cake mix shopping list
- Batter: shopping list
- 1 box cake mix (I use Duncan Hines Princess White Deluxe) shopping list
- 1 pkg. Vanilla Pudding & Pie Filling (NOT instant) shopping list
- 4 large room temperature eggs shopping list
- 3/4 c. warm water shopping list
- 1/4 c. room temperature vegetable oil shopping list
- 1/4 c. room temperature sour cream shopping list
- Topping: shopping list
- 1 T. brown sugar shopping list
- 1/4 t. cinnamon (or more) shopping list
- 1 T. finely shredded coconut (or more) shopping list
- 1 T. chopped nuts (or more) shopping list
How to make it
- Preheat oven to 350 degrees.
- Place rhubarb in pan, sprinkle lightly with cinnamon. Then sprinkle with sugar, Jello and add marshmallows.
- Blend pudding mix with cake mix. Add eggs, water, oil and sour cream. Mix until well blended. Beat 2 minutes at medium speed with electric mixer. Pour batter over fruit.
- Mix topping ingredients well and sprinkle over cake.
- Bake and cool before cutting.
- Any mixture of fruit can be used as long as it makes 5 cups, for example rhubarb, strawberries and blueberries, peeled diced apples, peeled diced fresh peaches and diced fresh plumbs. Use your imagination!
