- 6 thick slices of bacon diced shopping list
- 1/2 medium onion, sliced shopping list
- 2 tbsp. olive oil shopping list
- 2 small cloves garlic minced( more if you like) shopping list
- Lactose free shredded Parmesan cheese shopping list
How to make it
- Bring a large pot of water to a boil add salt to boiling water.
- Add pasta and cook till al dente according to package directions.
- Mean while for the Swiss chard, remove and slice the stems.
- Cut the leaves in half lengthwise and thinly slice, set aside
- In a large skillet cook bacon over medium high heat 4-5 minutes
- or until lightly browned.
- Add onion, cook and stir 2 min.
- Add garlic, cook and stir for 1 minute.
- Add chard stems, cook 1 min.
- Add chard leaves, cook and stir 2 min.or until wilted.
- Add cooked pasta and oil , cook and stir until heated through.
- Top with lactose free Parmesan and serve.
- If you can't find lactose free cheese, leave it out, and add reg. parm. at the table for those that can have it. If you find it too dry add a bit more oil.
- I do not add salt and pepper to this as the bacon for me is salty enough.
- Beet greens would work well with this dish also.
- If the chard is old do not use the stems as they will be tough.
- I put 3-4 servings, but hubby and i can eat all:)))
