How to make it

  • Bring a large pot of water to a boil add salt to boiling water.
  • Add pasta and cook till al dente according to package directions.
  • Mean while for the Swiss chard, remove and slice the stems.
  • Cut the leaves in half lengthwise and thinly slice, set aside
  • In a large skillet cook bacon over medium high heat 4-5 minutes
  • or until lightly browned.
  • Add onion, cook and stir 2 min.
  • Add garlic, cook and stir for 1 minute.
  • Add chard stems, cook 1 min.
  • Add chard leaves, cook and stir 2 min.or until wilted.
  • Add cooked pasta and oil , cook and stir until heated through.
  • Top with lactose free Parmesan and serve.
  • If you can't find lactose free cheese, leave it out, and add reg. parm. at the table for those that can have it. If you find it too dry add a bit more oil.
  • I do not add salt and pepper to this as the bacon for me is salty enough.
  • Beet greens would work well with this dish also.
  • If the chard is old do not use the stems as they will be tough.
  • I put 3-4 servings, but hubby and i can eat all:)))
