How to make it

  • mix sugar in 1/2 cup water.
  • sprinkle on yeast, don't stir.
  • while yeast is softening, combine flour and salt
  • make a well in center of flour, pour in yeast with remaining water.
  • Stir and mix dough then knead about 10 minutes by hand either adding a bit more flour or water to make a pliable, firm dough.
  • Let rise 1 hour in an oiled covered bowl or till double in a warm place, then punch down, let rest 10 minutes
  • divide into 8 equal pieces
  • form into a smooth balls.
  • with floured fingers, stretch a hole in middle of dough
  • Let bagels rest 10 minutes covered with tea towel.
  • boil a pot of water, preheat oven to 425F
  • place bagels in boiling water with slotted spoon.
  • boil 1 minute and turn and boil 1 min again.repeat boiling again so each bagel gets boiled a total of 2 minutes each side
  • . they will expand.
  • remove with slotted spoon to baking sheet ( my note on silicon baking pad or oven stone dusted with cornmeal )
  • if you want a topping, beat an egg with a bit of water and brush over bagels, sprinkle on seeds.
  • bake till golden brown about 20 minutes
  • remove and cool on rack
  • my note: if not eaten the same day, freeze
  • They will expand when being boiled, no more rise when baked
  • Best results when I baked my on an oven stone
