Baked Italian Chicken Pasta

- 1 pound long macaroni noodles or your favorite pasta, cooked according to package directions, drained shopping list
- 1 1/2 to 2 cups cooked diced ( I used a Sams Rotisserie)chicken shopping list
- 1/2 cup heavy whipping cream shopping list
- 1/2 cup half and half( you can use all half and half if desired or even sub broth) adding more cream or half and half as needed ( depending on thickness desired) shopping list
- 1/2 stick butter shopping list
- 1 small onion, diced shopping list
- 1/4 cup diced bell pepper shopping list
- 1/2 cup asparagus tips shopping list
- ( I keep the stalks for sauces and soups) shopping list
- 1 clove garlic, minced shopping list
- 1 tsp basil oregano garlic spice shopping list
- 1 tsp Garlic Herb shopping list
- 1/2 tsp creole spice shopping list
- 1/4 tsp salt shopping list
- 4-5 basil leaves, chopped( optional) shopping list
- 1 can cream of chicken soup shopping list
- 1/3 block cheddar cheese ( about 2-3 ounces ) shredded shopping list
- 1/2 cup shaved or shredded Parmesan shopping list
- 4 ounces Mozzarella shopping list
- 1 cup pitted black olives shopping list
- Salt and pepper to taste( if you are salting Pasta do not add as much to the sauce shopping list
How to make it
- Cook pasta according to package , drain and set aside
- In a large skillet or saucepan, sauté onions and bell pepper for 2-3 minutes in butter.
- Add minced garlic and spices, tomatoes and asparagus, continue to cook over med heat for another two to three minutes.
- Stir in chicken and olives, whipping cream, soup, half and half, and basil. Lower heat to low medium and Cook for 5 minutes.
- Place sauce in large casserole dish, add pasta and toss well.
- Season( taste for seasoning) if desired with salt and pepper and sprinkle top with cheddar cheese
- bake in preheated 350 degree oven for 20-25 minutes or until cheese is melted.
- Tips:
- *you can also top with a few pieces of crumbled crisp bacon before baking
- * sauce is also good over rice , roasted or mashed potatoes, grits or even toast ( like chopped beef )
- * * omit chicken and use sauce as a garnish over roasted chicken or even fried chicken, beef or pork patties
