Turkey Fiesta Casserole

- 1 pound ground turkey shopping list
- Drizzle olive oil ( more if needed) shopping list
- 1 chopped onion shopping list
- 1 diced green bell pepper shopping list
- 15 ounce can tomato sauce shopping list
- 1/4 tsp minced jalapeño , optional shopping list
- 1/4 tsp Garlic minced shopping list
- 1/4 cup chopped cilantro shopping list
- 8 ounces shredded cheese shopping list
- 1 package Knorr Taco rice( or Spanish type rice) shopping list
- Sliced green onions for garnish shopping list
- Salt and pepper to taste shopping list
- Dash garlic powder shopping list
- Few dashes of Adobo spice shopping list
- Avocado chipotle creme shopping list
- 2 very ripe avocados shopping list
- 1/3 cup sour cream shopping list
- Tablespoon heavy cream or ranch dressing can be substituted shopping list
- 1 chopped Chipotle pepper packed in Adobo sauce shopping list
- ( add a little of Adobo ) shopping list
- Juice from one lime shopping list
- 1 tablespoon chopped cilantro shopping list
- Few dashes Adobo spice shopping list
- Salt and pepper to taste shopping list
How to make it
- In sauté pan, heat oil on medium high
- Add bell peppers and onions and cook 3 minutes
- Stir in garlic and jalapeño and continue to cook another minute or two
- Add ground turkey and cook while stirring until completely cooked, about 4 minutes)
- Stir in cilantro, tomato sauce and spices
- Cook rice according to package directions.
- Place rice and meat mixture in casserole dish
- Top with shredded cheese
- To bake: preheat oven to 350
- Sprinkle top of casserole with sliced green onions or chopped black olives if desired and bake at 350 for 35-40 minutes
- Remove from oven and allow to sit 5 minutes before serving if possible.
- Serving suggestions: top with cilantro, parsley, or crushed tortillas chips if desired. Serve with cilantro and chipotle creme on the side and/ or sliced limes on the side if desired
- Cilantro and chipotle creme
- In processor, blend together all ingredients until smooth
- Season with spices refrigerate until ready to serve
